Recipe for decorating your cupcake



Must be wondering how those cupcake look so beautiful...Well now you can have your own designs with these 2 recipe.

Butter Cream Icing

The butter cream icing is a soft-based icing which allows you to easily spread it like butter, write words or make decorative borders. The texture is a bit similar with whip cream which you can find on cakes.




Ingredients

1. 150 gm soften butter
2. 250 gm icing sugar
3. 1 tsp vanilla essence
4. 2 tsp very hot water

Method


1. Beat the butter & sugar with an electric beater till well combined.
2. Add in the vanilla essence & the hot water.
3. Beat untill smooth & creamy.

Tips: If you want it to be red, green or other colours, just add a drop of colour paste and mix it well with the icing.

Ways of using butter cream icing



1. If you want to use the icing as a base, use the spatula and spread it across the cupcakes.
2. If you want to use it for decorative purposes, take a pastry bag & cut the end a little. Then fit the pastry tip (design according to your choice) to the end of the cut area. Make sure it fits nicely. You can secure it with a tape if you want. Then take use the spatula to scoop a fair amount of icing batter into the pastry bag. Squeeze it till the icing batter comes out from the pastry tip.


Sugar Paste Icing


Sugar paste icing's tecture is much harder. It is useful if you want to mold shapes and other designs as it is able to stand.
Ingredients
Ingredients for colouring and decoration

1. One, egg white (Egg size 3)
2. 1 tbsp liquid glucose, warmed
3. 350 gm shifted icing sugar

Methods

1. Stir the egg white and the liquid glucose together in a large bowl.
2. Add in the icing sugar and mix it with a spatula in a chopping manner until the icing begins to bind together.


3. Knead the mixture with your fingers till it forms a ball.

Tips: If you want it to be coloured, out a few drops of colour paste on the dough and knead it till the whole dough is coloured.

1. You can use a shape cutter or a knife to cut the paste into any shape you desire.
2. You can also flatten the paste and use it as a cover top for your cupcakes.

Storing tips: Wrap the paste with a clear foil and keep it in the fridge. It can last for about a week. If the paste is dry, add a few drops of warm water and knead it.

Simple recipe for cupcakes


Once you have the basic tools for baking, here's a simple recipe you can try it out. Everyone now is talking about cupcakes. It is can be very beautiful as well as cute depending on the design of the cupcakes.

Ingredients

1. 140 gm butter
2. 120 gm castor sugar
3. 2 eggs
4. 8 tbsp milk
5. 1/2 tsp vanilla essence
6. 200 gm shifted flour
7. 2 tsp baking powder




Method



1. Beat butter untill soft then add in the castor sugar and beat again at medium speed.
2. Add eggs one at a time then add the vanilla essence then the milk. Beat till well incorporated.
3. Add in the shifted flour with baking powder and beat at a slower speed.

5. Fill the muffin cups with batter.


6. We added a touch of chocolate chips into the batter by dropping a pinch of 5 chips in each batter!
7. Preheat oven or microwave oven at 180 degrees and bake for about 25 mins. Do a skewer test after 15 mins. If the batter is cooked, the cupcakes are ready even though its not 25 mins yet.




Tips: If you are using a microwave oven, put a bowl of water in the middle so that there will be moisture in the cupcakes. This is because, microwave oven adsorb water when cooking, thus your cupcakes will be very dry.

Basic tools for baking


1. Mixer - it does not matter if you use a hand mixer or an electronic mixer so don't be fooled by the salesman when they say electronic mixer is better. A hand mixer cost about RM 75 - 100. An electronic mixer cost about RM 350 to 2500 (depending on the brand and usage).

2. Weighing scales

3. Spatula - is good to get different sizes of spatula so that it is convenient when your handling things or items which are small sizes.

4. Measuring spoon - when you purchase a set of measuring spoon, make sure that the measurements are stated clearly so that you wont get confuse with the measurements. Some measuring spoon does not state the measurements. So be careful when you buy. It will be much easier when you have the right measurements.

5. Pastry bags - you can get pastry bags from the baking shop. It does not have to be cloth material. The one shown in the picture above are plastic material.

6. Pastry tip - pastry tip(s) are very useful for making decorations. Depending on the tip, you can make roses, leaves, heart shapes and etc. There are different sizes as well. So choose the sizes according to the size of your cake.

7. Sieve - a metal sieve is recommended because you can wash the grease off easily.

8. Grease paper - the grease paper comes in big pieces. You can cut it into half or sizes according to what you need.
Tips: When weighing the butter, you can place a sheet of grease paper on the scale so that it will not be oily and difficult to wash.

Another useful tip when baking is use hot water to wash or rinse all the utensils which are oily. The grease or oily will come off easily. =]
